Tilapia and Black bean Salad tonight! Keep your fingers crossed.

I took spring break off from this blog.  We used that time to cook outside hamburgers and chicken.  Also revisited some of the family favorite recipes.  Made some of the recipes already posted on my blog also.  We had a Saint Patrick's Day Potluck.  I made the corned beef and potatoes and cabbage in the crockpot.  It was still wonderful.  I did substitute 1 cup of beer for 1 of the cups of water.  I highly recommend this recipe.

Tonight I am going to make Broiled Tilapia Parmesan and black bean and corn salad. I will let you know tomorrow the picky family's reactions.  Here are the recipes I will be using:

Black Bean and Corn Salad

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon white sugar
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 3 tablespoons chopped fresh cilantro
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (8.75 ounce) can sweet corn, drained

Directions

  1. In a small bowl, mix together balsamic vinegar, oil, salt, sugar, black pepper, cumin, and chili powder.
  2. In a medium bowl, stir together black beans and corn. Toss with vinegar
Broiled Tilapia Parmesan

Ingredients

  • 1/2 cup Parmesan cheese
  • 1/4 cup butter, softened
  • 3 tablespoons mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon celery salt
  • 2 pounds tilapia fillets

Directions

  1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
  2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
  3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
